KELLY'S LEMON CUSTARD (SERVES 3)
2 CUPS THAI COCONUT MEAT
5 TBSP FRESHLY SQUEEZED LEMON JUICE
1 CUP THA COCONUT WATER
8 DATES, PITTED AND SOAKED
1/4 TSP PSYLLIUM HUSKS POWDER
1 TBSP ALCOHOL-FREE VANILLA EXTRACT
3 STRAWBERRIES (GARNISH)
1 SLICED KIWI (GARNISH)
IN a strong blender, combine all ingredients and blend until very smooth. Check for flaver, and add more dates or lemon juice accordingly. Pour into serving cups and chill. Garnish and serve.
