EVIL SPINACH TOFU BAKE Ingredients: Cheese or cheese sauce (vegan) 3+1/2 lbs frozen spinach 4+1/2 lbs mashed potatoes 2 onions. finely chopped 1/2 bulb of garlic, chopped (or lesS, according to taste) 1/2 tbsp dried basil 1 cup yeast flakes (optional) salt and pepper to taste oil for frying Preparation 1. Defrost the spinach. Cook and mash the potatoes. 2. Fry the onion and garlic in the oil until slightly browned. 3. Put the spinach. herbs and seasoning in with the onions and heat through. 4. Mix thoroughly with the mashed potatoes and yeast flakes. 5. Grease a roasting can and spoon the mixture into it. 6. Smooth the top over with vegan cheese or cheese sauce (see across). 7. Bake in a preheated 350°F oven until browned on top (about 30 minutes). -Suzy, Warzone Sample Vegan Cheesey Sauce 3 Tbsp. margarine 2-3 Tbsp. flour 1 Tbsp. mustard 4 cups Soy milk 1 cup Yeast Flakes Melt the margarine and stir in the flour and mustard; make sure it's not lumpy. Gradually stir in the milk, stirring constantly so it doesn't go lumpy. Turn the heat up and stir until it thickens. Once it thickens, turn the heat off and add in the yeast flakes.
