Don't let the fact that it is microwave made scare you. It is legitimately good stuff. If you don't have a microwave big enough to fit the large Pyrex dish you could throw it in a conventional oven Oust cook the noodles first). Ingredients: * 2- 10 oz. pkg. frozen chopped spinach * 1- 32 oz. jar of your favorite prepared spaghetti sauce (preferably w/ mushrooms) --I have found that Prego works the best (even though it is not close to being my favorite on top of spaghetti). * 1/2 cup dry red wine (Burgundy cooking wine) * 1/4 teaspoon garlic powder * Dash of nutmeg * 1- 16 oz. carton cottage cheese * 1/4 cup parmesan cheese * 1 egg, beaten * Dash of pepper * 6 uncooked lasagne noodles * 8 oz. mozarella cheese, sliced * 1- 3 oz. can chopped ripe olives, drained Directions: Place packages of spinach in a 2 quart rectangular glass dish. MW on high 5 minutes. Drain and squeeze out all moisture. Set aside. Combine spaghetti sauce, wine, garlic powder, and nutmeg in a 2 quart batter bowl. MWon high for 5-6 min. or until hot. Remove 1-1/2 cup of sauce and set aside. Add spinach to remainder of sauce in batter bowl. In another bowl, mix cottage cheese, parmesan cheese, beaten egg, and pepper. Pour 1/2 of the spinach sauce into bottom of the 2 quart rectangular dish. Place 3 uncooked noodles over the sauce, then 1/2 of the cottage cheese mixture, then 1/2 of the mozarella. Repeat layers. Add olives to reserved sauce; stir and pour over the top of casserole (I like to throw in some more parmesan cheese into this top layer as well). Cover with plastic wrap. MW on high 5 min., then MW on medium-high (70%) for 20 min. Let rest for 10-15 min. before serving. Makes a lot. Pretty easy, and pretty darn good stuff. As you can see you could add whatever other vegetables you would like in there. The only thing is that you would cook the crap out of them if you threw them in in the beginning.
