Shaksuka
Ingredients -- Ovo-Lacto Vegetarian (optional
bacon)
This is a traditional
cheap breakfast made daily by college students in the
middle east, according to the food blogger KWOOK.
- 1/2 to 1 medium onion, chopped fine
- Optional breakfast vegetables such as peppers
and mushrooms, thinly sliced or chopped; optional cooked
bacon, crumbled
- Tomato sauce, for example Moroccan mint tomato
sauce; or an eggplant purée sauce like Mutabal or Hunkar
- 2 eggs
- Seasonings: minced garlic, black pepper,
parsley, basil, feta cheese to taste
- Keto base such as riced cauliflower or quinoa
Use a wide pan or saucepan that has a cover.
Sautée the chopped onion in butter or oil until it begins to
become translucent. Add any other vegetables you prefer
and continue frying until the onions become a bit
crispy. Stir in the sauce and spices without turning
down the heat.
As the sauce mixture starts to simmer, poach 2 eggs in the pan
by hollowing out two small depressions in the sauce -- crack
the eggs carefully into the depressions without breaking the
yolk -- then cover the pan and simmer on low for 5 minutes.
Test that poached the egg white is done by poking it.
It's done when somewhat solid and opaque. Mix in some
roughly chopped seasonings and preferably feta cheese, stir to
melt it together. Serve on top of a base like cooked
riced cauliflower, or quinoa.

KWOOK also recommended breakfast burritos by heating and
combining cooked or refried beans with scrambled eggs, and the
other breakfast vegetables like onions and peppers and
mushrooms (cooked). Keto tortillas (e.g. brand name
Cremini) made from egg crepes can serve a keto dieter well,
wrap the filling inside the egg crepes with some cheese and a
touch of one of the sauces mentioned, for flavor -- like mint
tomato sauce, Mutabal, or Hunkar for flavor.
