Purpose Cream Cheese Frosting
Ingredients -- Ovo-Lacto Vegetarian
Useful
for enlivening sweet keto recipes such as
alternative-flour muffins etc. This is only
about enough frosting for maybe 6 muffins at
most. Not full keto since it relies on sugar,
but a better alternative than regular frosting.
- 4 ounces Cream Cheese
- 2 Tbsp Butter (about 1/4 stick)
- 2 Tbsp Coconut Oil
- 1/5 cup regular confectioner's sugar
- 1/5 cup granulated keto sugar, such as coconut
sugar or allulose
- 2+ Tbsp Vanilla extract
- pinch (~1/8 tsp.) Salt
- dollop (~1/4 tsp.) Maple Syrup and/or other
flavorings such as cinnamon
For frosting: melt the cream cheese, butter, and
oil gently in a microwave, around 30 seconds at a time, until
soft and liquid. Mix in the other ingredients. Use
a blender (e.g. vertical stick blender) to whip it into
stiffness and a clean consistency. Place this bowl in
the refrigerator while working on other ingredients. It
should be fairly spreadable even when cold.
