Snickers & Reese's a.k.a. "Fat Bombs"
Ingredients -- Vegan or Ovo-Lacto Vegetarian
Chocolate Coating (for Homemade Reese's)
- 1/2 cup Cacao Butter (~60g), and/or Coconut
Oil, or regular Butter (non-vegan)
- 2 heaping Tbsp Peanut Butter (or some other nut butter)
- ~1 cup dark chocolate chips (assumed
semi-sweet)
- ~1/3 cup coconut sugar (if necessary based on
sweetness of other ingredients)
- ~1/3 cup cream
- ~1/4 cup Cocoa Powder (unsweetened)
- 1 tsp. Vanilla Extract
- pinch of salt, optional
cinnamon, or finely shredded coconut, etc.
Nougat Filling (for Homemade Reese's)
- about 15 dates, pitted (basically any variety)
- about 15 large walnut pieces (optional)
- coarse grained sea salt
- toothpicks.
Melt each ingredient, in order, gently in
microwave, preferably using a Pyrex measuring cup. Mix
and stir thoroughly -- until even consistency -- at each
step. Sift in the coconut sugar, (or other sweetener),
while the chocolate is very hot, so as to melt the granules.
Sift in cocoa powder, again to avoid granules. Add
remaining spices. Taste and adjust sweetener (can add
liquid stevia).
If Making Homemade
Reese's:
Divide the chocolate mix into silicone muffin cups while still
warm and pour-able. Cover and refrigerate for 4 hours. After the treats are solid, remove them
from the muffin cups and (optional) shake them inside a
plastic bag or container with a small amount of cocoa powder,
to limit how much they melt & stick to one's fingers.
If Making Homemade Snickers:
Be sure the dates are pitted, and replace each pit with
a large walnut half, if desired. Skewer each date
with a toothpick and use it to dip each date into the
warm chocolate mix, turning so they are fully
coated. Place inside a container for
refrigeration. But while still warm, sprinkle a
pinch of coarse grained sea salt over each treat.
I personally prefer to remove all the toothpicks after
the chocolate has solidified, rather than waiting until
eating them. If the toothpicks are removed in
advance, then like the above recipe, we can (optional) shake them
inside a plastic bag or container with a small
amount of cocoa powder, to limit how much they
melt & stick to one's fingers.
