Fried
Tofu Recipes
I often find it preferable to
fry tofu, in order to make it more solid and chewy.
Works better as a meat substitute that way. You could
also dip cubes of fried tofu into Fondues.

Sin's Pan-Fried Tofu
Ingredients -- Vegan -- Tofu and cooking oil
First freeze some
extra firm tofu. Better to take it out of package
and water, wrap in plastic on a tray and then
freeze. But freezing the package is
acceptable. Once thawed, squeeze out excess liquid
by pressing it between two plates. Ideally one
would set a weight upon the top plate, and let the
liquid squeeze out for at least half an hour.
Slice into thin slices, spread on a dish and sprinkle a
little salt (cure). Let sit out 15 minutes, or
refrigerate.
Get a small amount of oil very hot
(moving/sizzling/barely smoking) in a NONSTICK
pan. Place the tofu slices in single layer.
Pressure a little with spatula and shake pan a few
minutes. When you stop feeling bubbling/vibration
when you press with a spatula, then it is basically
cooked through.
For silken tofu, it's fragile, handle with extreme care,
shake only gently and short motions. Don't play
with it too much.
Brown sauce: Add some oil to a hot pan, then add
- thinly sliced Shallots and Scallions
- chilis and garlic (towards the end)
In a separate bowl, mix a small amount of
thickener (try arrowroot? originally potato flour) 1:1
with water. Sear the fried tofu in the shallots etc.,
with a small cup soy sauce + oyster sauce / "abalone
sauce". Add some additional water. Add MSG (or
mushroom powder or bouillon?) Try to move the pan in a
circular motion instead of flipping it. Add the
thickened water and adjust thickness after a few moments.
Air
Fryer Tofu
Marinate cubes of tofu (after pressing dry 30
minutes) in soy sauce, garlic, and sesame oil. Air fry
at 350 degrees F for 5 minutes without shake/stirring; then
fry another 10 minutes and shake/stir
occasionally.
Basic
Fried Tofu
Marinate tofu cubes (pressed as above) in lemon
juice, tamari, and garlic. Add oil to a hot skillet,
arrange cubes, cover and fry for 7 minutes until crispy.
Flip, fry another 5 minutes covered, then fry uncovered for
about 2-3 minutes.
