Hungarian Goulash a.k.a. Segedinsky Goulaj

Ingredients --  Ovo-Lacto Vegetarian with optional meat

Sautẻe the meat, if desired, with the onion, in the butter until the onion becomes translucent.  Add the mushrooms at the last few minutes, frying until they just start to cook.  Add soup stock or water to cover and simmer, briefly, until medium-well cooked.
Add the paprika, other seasonings, and Wondra to the mix.  When beginning to thicken, add the sauerkraut.  Simmer until hot, adding more water or stock if necessary.  Add the sour cream just before serving.  Adjust the thickness with either more sour cream, or more water & stock.
