Goulash a.k.a. Segedinsky Goulaj
Ingredients -- Ovo-Lacto Vegetarian with optional meat
- If meat is desired, 2 lbs. of Pork or Veal,
cubed
- 1 lb. Mushrooms, diced
- 1 large Onion, finely chopped
- 1 jar rinsed Sauerkraut
- 1 to 1+1/2 cup sour cream
- 1/4 cup Wondra flour
- Water or Soup Stock to cover the other
ingredients; butter or oil for frying
- Generous dash of Paprika
- salt & pepper to taste

elsewhere about keto substitutes for noodles. Shiritaki
noodles, low-carb Asian noodles such as mung bean, "Ancient
Grains" or other low-carb noodles from chickpeas and other
alternatives; spiral-cut squash, or thinly sliced green
beans are possibilities.
Sautẻe the meat, if desired, with the onion, in
the butter until the onion becomes translucent. Add the
mushrooms at the last few minutes, frying until they just
start to cook. Add soup stock or water to cover and
simmer, briefly, until medium-well cooked.
Add the paprika, other seasonings, and Wondra to the
mix. When beginning to thicken, add the
sauerkraut. Simmer until hot, adding more water or stock
if necessary. Add the sour cream just before
serving. Adjust the thickness with either more sour
cream, or more water & stock.
