Czech Dill Sauce
This sauce is traditionally served over Czech
dumplings and pork or corned beef. The Czech would even
put this over cooked Carp (fish) for Christmas. I have
not found a way to make Czech dumplings Keto. However
this sauce could go well over various types of meat, or hearty
vegetables such as cauliflower.
Ingredients -- Ovo-Lacto Vegetarian
- 1+1/2 cups sour cream and/or plain unsweetened
yogurt
- 1 cup white wine, divided (3/4 cup and then
1/4 cup)
- 2 small Green Onions
- 1/2 cup mushrooms, chopped fine
- 1 packet or tsp. chicken bouillon concentrate
- Quantity of milk to dilute the sauce (about 2
to 3 cups), regular cow's milk or creamy oat milk etc. will do
- 1 heaping Tbsp dried Dill Weed
- 2 Tbsp Lemon Juice
- Arrowroot or keto flour such as coconut flour,
to thicken sauce (about 1 heaping Tbsp)
- black pepper to taste (dash)
Sautée the onions and mushrooms in a bit of
oil. When they start to go soft, add the 3/4 cup wine
and continue sautéeing for about two minutes. Add the
sour cream and spices, including bouillon, but not the
Arrowroot thickener nor lemon juice. Allow to boil about
5 minutes. Dilute the sauce with milk or water until
it's a bit runnier than you would want. Allow to boil
again. Mix the Arrowroot with the remaining wine and
stir well until completely dissolved. Sprinkle
throughout the sauce and mix thoroughly and rapidly to avoid
clumps. Remove from heat and add the lemon juice.
Mix well.
