Raita
and Tzatziki sauces
Raitia is Indian (Hindu) and
Tzatziki is Greek, they are both tangy sauces with
yogurt. But their fans insist they are quite different
in flavor. They both garnish foods such as Falafel or
Gyros quite well.
Raita
Ingredients -- Vegan if you don't mind yogurt
- 2 cups plain yogurt
- 1 medium-sized cucumber -- peeled, seeded, and
shredded fine with a cheese grater
- 1 large tomato, peeled and chopped
fine, drained of excess liquid
- 1/2 Tbsp ground Cumin
- 1/2 Tbsp Paprika
- salt to taste
Mix all ingredients well.
Tzatziki
Ingredients -- Vegan if you don't mind yogurt
- 32 ounces (4 cups) plain yogurt
- 2 Tbsp Extra-Virgin olive oil
- 1/2 English cucumber with peel -- shredded
fine with a cheese grater
- 2 Tbsp fresh lemon juice
- 1 clove garlic, pressed
- 3 Tbsp chopped fresh Dill
- 2 tsp. grated Lemon Zest
- optional: small amount of Fennel
- freshly ground black pepper to
taste (approx. 1 Tbsp)
- salt to taste (approx. 1 Tbsp)
Combine all wet ingredients, add spices
last. Mix well until smooth. Allow time for the
flavors to marry.
