Roast
Asparagus with Pistachios
Ingredients -- Ovo-Lacto Vegetarian
- 2 lbs. Asparagus, trimmed
- 2 Tbsp Olive oil
- 1/2 cup Pistachios
- 1/2 cup grated Parmesan cheese
- salt & pepper to taste
Preheat oven to 425 degrees.
Place asparagus on a baking sheet, drizzle with oil, toss to
coat. Season to taste with salt and pepper.
Arrange the asparagus in a single layer. Roast on center
of oven for 10 minutes only. Remove from oven, sprinkle
with the pistachios and Parmesan. Return to the oven for
5 minutes. Serve immediately.
