Avo-Cucumber
Smoothie or Gazpacho (cold soup)
Ingredients -- Vegan (unless you thicken it with
yogurt?)
- 2 ripe Avocados
- 1 large Cucumber, peeled and chopped
- 1 small Garlic clove
- 1 Lime, juiced
- 1/4 cup chopped cilantro &/or parsley
- 1 cup cold water, or light/thin plain yogurt
for a thicker soup
- salt and pepper, to taste
- optional: chopped chives, red pepper flakes,
olive oil for garnish
Blend all ingredients except salt & pepper
& garnishes. Chill in fridge for 30 minutes, if
possible. Add salt & ground black pepper to taste,
then blend again.
Needs a little zip. Ideally coat the rim of your bowl or
glass with Taijin.
