Blueberry
Butter Swim Bread
Ingredients -- Ovo-Lacto Vegetarian
I suppose this is called Swim
Bread because it's swimming in butter. From the weird
"Drew Cooks" YouTube channel.
- 2+1/2 cups keto flour (could use oat flour,
quinoa flour, almond flour, etc.)
- 1/4 cup granulated keto sweetener (such as
allulose or monkfruit)
- 1 Tbsp baking powder, recommend pinch of
Xanthan gum
- 1/2 tsp. salt
- dash of vanilla
- 1+3/4 cups buttermilk
- 1+1/2 cup blueberries
Whisk the dry ingredients together, then add the
vanilla and buttermilk. Mix until you get a sticky dough
ball. Next stir in the blueberries.
Grease a 9x9 baking dish generously with melted unsalted
butter. Plop the dough ball in. Level it and spread it out a
bit with a spatula (doesn’t have to be perfect). Pre-cut
the dough into slices before baking.
Bake at 450 degrees F for 25-30 minutes, checking to be sure
it’s golden brown, but not burnt.
Drew recommends a powdered sugar icing, but I will use my cream cheese icing.
Spread the icing over the hot bread, serve the dish when
cool.
Meringue
advertised as "Cloud Bread"
Ingredients -- Ovo-Lacto Vegetarian
Some YouTuber advertised this
as pull-apart dessert bread, as if they'd never heard of
Meringue before...
- about 11 ounces (300 ml) egg whites
- Dash of vanilla, and/or "Flavor
drops" such as unsweetened water hydration flavor drops
- Protein powder, (recipe was vague, maybe start
with 1/4 cup??)
Mix the egg whites, and any flavoring, with an
electric mixer for 8 minutes to get them really fluffy and
stiff. Add the protein powder. Again recipe was
vague, but suggest trying to bake it at 340 degrees F for 40
minutes.
