Experimental Breads
& Cakes
Yeah sometimes you get a hankering for bread. Cake.
Sometimes finished keto bread products or pre-packaged mixes are
available in grocery stores. Some recipes for keto breads
with almond flour or coconut flour are easily found on the
Internet, but I find them hit-or-miss. Nevertheless, if you
want to make it yourself, here are some attempts to satisfy those
cravings in a Keto manner.
Keto
Mock Cheesecake
Ingredients -- Ovo-Lacto Vegetarian
Real cheesecake is generally
keto, except for any crust. This is kind-of an
all-purpose breakfast or dessert loaf which is slightly easier
to make than real cheesecake.
- 1+1/2 cups Greek yogurt (or cottage cheese
blended smooth; Note - Ricotta cheese was too salty)
- 4 eggs
- 3 Tbsp maple syrup, or another keto sweetener
such as coconut sugar
- 2 Tbsp keto flour of choice (coconut flour,
almond, oat, quinoa, etc.)
- consider: touch of sweetener such as maple
syrup or fruit syrup
- generous 1 tbsp. vanilla ; pinch of baking
soda, pinch of Xanthan gum
- 1 cup blueberries
Suggest baking the blueberries in a single layer
on a baking pan, maybe 325 degrees for 25 minutes, to
eliminate some of the moisture that the blueberries would
otherwise bleed into the dish. Dried fruit would also
work.
Combine all other ingredients, saving the blueberries to mix
in last.
Bake in a different shallow pan lined with parchment, at 340
degrees F for 30 minutes. Edges should be golden brown.

Butter Swim Bread
Ingredients -- Ovo-Lacto Vegetarian
I suppose this is called Swim
Bread because it's swimming in butter. From the weird
"Drew Cooks" YouTube channel.
- 2+1/2 cups keto flour of choice (coconut flour, almond, oat,
quinoa, etc.)
- 1/4 cup granulated keto sweetener (such as
allulose and/or monkfruit)
- 1 Tbsp baking powder, recommend a pinch of
Xanthan gum
- 1/2 tsp. salt
- dash of vanilla
- 1 stick (4 ounces) unsalted butter
- 1+3/4 cups buttermilk
- 1+1/2 cup blueberries
Whisk the dry ingredients together, then add the
vanilla and buttermilk. Mix until you get a sticky dough
ball. Next stir in the blueberries.
Grease a 9x9 deep baking dish generously with all the melted
unsalted butter. Plop the dough ball in (gently, don't
splash the butter everywhere).
Level it and spread it out a bit with a spatula (doesn’t have
to be perfect). Pre-cut the dough into 9 slices before
baking. It will rise up above the top of the dish.
Bake at 450 degrees F for 25-30 minutes, checking to be sure
it’s golden brown, but not burnt.
Drew recommends a powdered sugar icing, but I will use my cream cheese icing.
Spread the icing over the hot bread, serve the dish when
cool.
Savory
variation: Sausage
Gravy Swim Biscuits !
Spread 2 cans of store-bought sausage/gravy on the
bottom of the baking pan, before spreading the same
dough recipe on top (same as above, except omit the
sweetener). Top with additional 1/2 stick (2 ounces)
melted butter before baking.
Keto
Fruit Pie
Ingredients -- Ovo-Lacto Vegetarian
Some keto pizza recipes use a
crust made from cottage cheese (blended) or cream
cheese. This type of "crust" might serve for a pie, but
it'd come out more like a strudel, with a soft crust. A
sweet pastry version of the cream cheese type crust might go
like this:
- 1 (8 oz) package of full fat cream cheese,
and/or substitute some portion with cottage cheese blended
smooth in a blender -- room temperature (note: Ricotta cheese
works for savory pies, but it's much too salty for sweet fruit
pies.)
- 2 eggs
- 2 Tbsp maple syrup, or another keto sweetener
such as monkfruit or coconut sugar
- 2 Tbsp oat flour, or keto flour
of choice (coconut flour,
almond, quinoa, etc.)
- consider: pinch of baking soda, pinch of
Xanthan gum, healthy dash of vanilla; pinch of cinnamon if
compatible
Filling:
- Suggestions include blackberries &/or
rhubarb, blended with Chia seeds or gelatin, plus water;
or maybe sliced apples soaked in lemon to make a "sharlotke"
(Russian fruit tart with dry filling), etc. Look for
"Solo" pie filling with lower-sugar fruits, such as their
Poppyseed filling plus some plums or whatnot.
Line a shallow 9x9 baking pan with parchment
paper, then spray oil or Pam onto the paper. Mix the
crust ingredients well, spread them into the pan, and bake at
340 degrees F for 30 minutes. Watch to see if the edges
brown. When it's done, it should be solid enough to pull
out the paper from the pan without the crust breaking up or
falling apart. Now flip the crust back into the baking
sheet so that it's upside-down from the way it was first
baked.
Add the filling and bake again at 350 degrees F for another 30
minutes.
Keto
Pizza Crust
Ingredients -- Ovo-Lacto Vegetarian
Here's an example of a keto pizza crusts
recipe similar to the above. This type of "crust"
doesn't really come out crispy, but it's serviceable.
- 2 eggs
- 1 (8 oz) package of full fat
cream cheese, and/or substitute some portion with Ricotta
cheese -- room temperature
- 1/4 tsp ground black pepper ; 1
tsp garlic powder
- 1/4 cup grated parmesan cheese
- pinch of Xanthan gum
Topping:
Line a shallow small baking sheet with
parchment paper, then spray oil or Pam onto the paper. Mix the
crust ingredients well, spread them into the baking sheet, and
bake at 340 degrees F for 30 minutes. Watch to see if the
edges brown. When it's done, it should be solid enough
to pull out the paper from the pan without the crust breaking
up or falling apart. Now flip the crust back into the
baking sheet so that it's upside-down from the way it was
first baked.
Spread the topping evenly, and bake again at 350 degrees F for
another 30 minutes (if you're trying to cook the filling
ingredients somehow, like my Flan; if you're just melting
cheese and crisping pepperoni, this time can likely be
reduced).
Carnivore
Bread
Ingredients -- Ovo-Lacto Vegetarian
This loaf works well as a
keto substitute for French Toast by itself (because it's full
of eggs). To serve as French Toast, brown each slice a
little more, top with whip cream and some sort of keto syrup
(allulose maple syrup substitute, or just use regular maple
syrup).
- 4 eggs (room temp)
- 12 oz Cream Cheese (also room temp)
- 4 oz (1 stick) butter (softened)
- 1 cup Egg White Powder (or vegetarian
egg-white-substitute powder? If necessary, try powdered
milk or powdered goat milk instead, but it doesn’t come out as
well)
- 2 tsp. baking powder
- 1/2 tsp. baking Soda
- 1/2 tsp. Cream of Tartar
- pinch of Xanthan gum
- 2 tsp. gelatin powder
Whisk together the whole eggs, cream cheese, and
butter, until creamy. Stir in all the powders.
Preheat oven to 325 degrees F. Line a 9x5 loaf pan with
parchment. Bake for 45 to 55 minutes. The outside
of the loaf should look deep golden brown, like regular bread
crust, when done. Cool completely before cutting.
Meringue
advertised as "Cloud Bread"
Ingredients -- Ovo-Lacto Vegetarian
Some YouTuber advertised this
as pull-apart dessert bread, as if they'd never heard of
Meringue before...
- about 11 ounces (300 ml) egg whites
- Dash of vanilla, and/or "Flavor
drops" such as unsweetened water hydration flavor
drops (depending what flavor your protein powder
might already have)
- Protein powder, (recipe was vague, maybe start
with 1/4 cup??)
Mix the egg whites, and any flavoring, with an
electric mixer for 8 minutes to get them really fluffy and
stiff. Add the protein powder. Again this recipe
was vague, but suggest trying to bake the mix in a large
parchment-lined baking pan at 340 degrees F for 40 minutes.
